Posted - Jan 30 2008 : 8:02:33 PM We love steel-cut oatmeal, especially on chilly winter mornings. Steel cut oats are whole oat groats that have been chopped into smaller pieces (unlike rolled oats that have been steamed, rolled and flaked for easier cooking). It takes awhile for the slow simmer, but it's so worth it!
Here's a good recipe:
1 tablespoon butter 1 cup steel cut oats 3 cups boiling water 1/2 cup whole milk 1/2 cup plus 1 tablespoon buttermilk (or add 1 tsp apple cider vinegar to regular milk to "sour" it) 1/4 teaspoon cinnamon Honey or maple syrup to taste
In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Spoon into a serving bowl and top with remaining buttermilk, syrup/honey, and cinnamon.
Huckleberries or blueberries and nuts make great additions!
Posted - Jun 08 2008 : 9:40:15 PM I love the idea of using the rice cooker...perfect!!! I just love steel cut oats but dont' make time for it often enough...I will now!!! The kids and I are all big hot cereal eaters...we love all sorts!!
