In case you haven't heard, there is a fantastic grain called quinoa (pronounced keen-wa), which makes an awesome backcountry meal component & is also an easy, nutritious, any-day dinner item.

Try it & share what you think. My family loves it as a basic side dish, cooked in organic chicken stock & olive oil & served with a dash of salt. Our favorite is the red variety.

Mother made some very tasty mac and cheese and instead of macaroni she used Quinoa. It was very creamy and tasty. She cooked the quinoa in boiling water til done-do not overcook. Made a cheese sauce and mixed together and 'voila!! Yummy easy food. MaryBeth

Now there is a idea. Moms know best. Are you still at Whidbey with your mom?
I use quinoa mostly =add to salads.

A recipe topic is a good call.
I cook outdoors here,got all kinds of backpacker specials after doing thru hikes and what we called expeditions.

I am running late to work will have to hunt and peck out a couple later.

YES! Jen, thank you so very very much for that link. I finally have some answers to questions about growing quinoa. Very interesting. I will have to experiment with a small planting next spring. I'm afraid we are too hot here in summer, and the days perhaps too long, but it will be worth a try (shade cloth?). I noticed there is quite an altitude requirement (7000+), but later in the article it mentions that future crops may have success at 2000-3000. Wonder if they are breeding a low-elevation type?
